Most other mods have a hard time finding composers, we never had this problem. Two great composers joined the team shortly after we set up a board.
Look at the this (alphabetically):
AqueousShadow
DZcomposer
Flamewave
originalglenn
strike911
Though not all of them have worked on tracks for SoL, we got many composers in the team right now.
I know the SF games had very nice music, but is there something 'special' that makes composers more interested in SF than in other games with good music?

No, not at all, IMHO.
I just happened to love the idea of an SF mod for FSO and coincidentally have a passion for music. :)

Well, there are a few games that are really popular with musicians, in my experience. Games like Sonic, Mario, Final Fantasy, MegaMan, and zillions of others have tons of remixes and rearrangements everywhere, because there music is so good. StarFox happens to be one of those games, because the source material is very catchy. That said, a lot of people disagree whether the SNES StarFox music was better than the N64 version. StarFox Assault's orchestrated versions of the N64 soundtrack is very awesome too, in my opinion. I guess I tend to fall somewhere in the middle, because I like the jazzy-rock-technoish feel of the original StarFox, but I also like the orchestrated feel of SF64 and Assault. It's left me wondering why Nintendo never ever redid any of the music from the first game (with a few exceptions being the title theme and a few others). Hearing those songs orchestrated would blow me away!
The StarFox series just has a lot of fans and a lot of good music.

And on that note... *pun* I would love to see OC remix to a project for Starfox 2, since I now have a sorce for all the music for that game in .mp3 format. It's not nearly as catchy as the first, but better than 64, in my opinion.

Fixed. :P Though looking at OCR, there's really not too many songs under Star Fox - especially SF64. The UnMod R Bad Men project might change that; I'm hoping, anyway.
But yeah. Star Fox has some great music. My first message board was a Star Fox community, so when I heard about this mod I really wanted to be a part of it. Incidentally, that message board was also where I first met DZ.
Though it looks to me like Half Life mods definitely reel in more composers than probably any other game engine. A good deal of it is likely the popularity of the engine itself. If FS2 mods want more composers, they're going to have to make themselves more known.

Indeed.
I don't know why, but Zoness seems to be my favorite song of the entire SF series.
I would LOVE to see (or hear) that one orchestrated someday...
